Nick Macleod put the home side ahead after seven minutes through a penalty, before scoring a try eight minutes later.
A second Sharks try from Johnny Leota and a Danny Cipriani conversion gave the hosts a 15-3 lead at the break.
Two Ian Humphreys penalties brought Irish back into the match in the second half.
However, Cipriani kicked two further penalties in the closing minutes of the game to secure a vital win for the side that remain bottom of the table.
