Damien Cardace got the visitors off to a strong start, scoring two tries in the opening half-hour, while Elliott Whitehead also went over for Catalans.
However, the home side got themselves back into the match before the break, with Richard Whiting and Kirk Yeaman finding the line just 12 minutes apart.
Hull were back on level terms early in the second half as Yeaman capitalised from a Catalan penalty to add his second of the game.
The home side went on to score five tries in just over 15 minutes and looked to be heading for a comfortable win.
However, Cardace completed his hat-trick before Zeb Taia scored twice in quick succession, giving Thomas Bosc a chance to tie the scores late on, but he sliced the conversion just wide, allowing Hull to hold on for the win.
